If you frequent this site, you know I am the queen of honesty! Almost to a fault. So how’s this for a confession, I am a terrible cook! Or at least I thought I was. The truth is I just need more practice! Learning the tricks of the trade is one of my goals over these next few months. And with that, I’ve decided to launch the Busy Mom Recipe Series! Through this series I will be sharing the recipes I come up with that feed my family well. And guess what sister, they will be quick and painless for us non chef mamas! To kick off this series I wanted to share a new favorite! This 30 Minute Creamy Parmesan Pan Chicken is so yummy!
Being the busy mom that I am, plus my slightly less than par culinary skills, I am forever trying to create quick and easy meals that I can whip up for my growing boys! Not to mention recipes that have easy ingredients. Ya know, the kind of ingredients that are in the typical working mom’s cabinet!
Typically when we make it home from the school round up it’s close to 6pm. Boys will be boys, which means they are already pounding down the pantry door as soon as we walk in. I am certainly not above microwaving some Easy Mac but when I come up with something quick that they boys gobble up, it gets put into the rotation. I have to tell you friends, I’ve tested this Creamy Parmesan Pan Chicken out on several peeps and they have all but licked the pan it was cooked it! Now, this one is popping up about once every two weeks over here and no one is complaining!!
WHAT YOU WILL NEED
4 Chicken Breast Fillets
1/2 cup Onion minced
1 1/2 cups Baby Bella Mushrooms Chopped
1 cup Cherry Tomatoes halved
1 cup Spinach leaves
2 cups Heavy Whipping Cream
2 tbsp Butter
2 tbsp Olive Oil
1 1/2 cup Parmesan Cheese
1 | Prep chicken with oregano, salt and pepper on both sides.
2 | Heat olive oil in a large skillet. Saute onions and mushrooms. Add cherry tomatoes to skillet and reduce over medium heat about 4 minutes.
3 | Add chicken to skillet and cook about 4 minutes per side. Remove from pan, set aside.
4 | Melt butter in skillet with vegetables
5 | Add heavy whipping cream and heat over medium heat. Add Parmesan cheese. Stir until cheese is melted.
6 | Add chicken back to skillet. Cover and simmer over medium-low heat about 10 minutes
7 | Serve!
