I’m trying y’all! Okay, realistically, I’m trying and I’m struggling. I’m trying so hard to behave. Trying to eat the right things, get enough steps in, wake up on time, you know…. all those things! But man, I’m struggling like I’m getting paid over here. Us moms are always on the move. Whether you work from home or work a 9-5, you are hustling. And if you’re anything like me, what you fuel your body with is last on your list of concerns. Here’s the sitch sister, put the oxygen mask on yourself before helping others. We can’t do our family much good if we have no energy and our body isn’t functioning 100%. In my efforts to find a healthy alternative, I came across Chef Savvy and her 5 Ingredient Peanut Butter Energy Bites and I just had to share!
I am not a cook. I am not a baker. I am the queen of a microwaved meals friends. Do not let this post fool you in any way! But all of these factors should work in my favor when I tell you these were the easiest things I accomplished all day! There are only five ingredients, which is usually my cut off point! If a recipe has more ingredients than that I am usually hitting the No Thanks button and moving on. I know that sounds terrible, but the fact of the matter is, I barely have enough time to even get five ingredients opened before the kids have started their next WWF round and I’m hauling butt to prevent utter catastrophe (and an ER visit to get something stitched up)! So, when I saw five ingredients + no bake, I knew this was one even I could handle. Like I said, I’m trying! Baby steps and maybe one day I will be sharing full course meals with ya! Well, that is if I can engineer some form of straight jackets for my children to hold them still for 10 minutes.
WHAT THESE BITES ARE ABOUT
These little bites are packed with protein and fiber to give your body the energy it needs…. and they have a little chocolate to satisfy my cravings! These little guys are great for a snack, breakfast on the run, or even a pretty darn good sub for dessert! They literally took me 30 minutes to make and that includes the 20 minute sit in the fridge time. I’m telling y’all, this is my kind of recipe!! I managed to pack up my five year-old’s lunch for tomorrow, pried two children off the ceiling fan, and wrote out my editorial calendar for next week all while whipping these treats up! And there is a question if I need more energy? Either way, I’d call that productivity! Ya get in where ya fit in! Can I get an AMEN! And if you’re wondering if they are yummy or not? I’ll just tell you since we are friends and I can be transparent without judgement, right?! So, the recipe yields 12 bites – they only lasted a day (oops).
